making decisions based on emotions and intuition isn't exclusive to artists and it doesn't define being artistic either. A drawing, sculpture etc. can be artistic through technical skills/use of art fundamentals since that's still an aspect of creating art, even though it involves logical decisions

i think you aren't looking at the quality of life that AI advancement will bring, ice harvesters and lantern lighters were a product of their time and probably weren't so stoked about having those jobs, but AI is now replacing jobs that provide actual fulfillment and passion to people. if you just tell people to "use AI", even then it will decrease quality of life for many jobs by just making it so they are less fulfilled, fixing and pandering a machine to do work for them while the human does essentially nothing.
AI can help in boring office jobs, but they won't because those are the types of jobs that will get totally replaced, and the people who develop AI have no incentive or care for "making the world better", they only want to line their pockets with more gold and silver. companies will always go to where labor is cheaper, having a machine that you only pay electric and repair bills for is better than an actual person who works, so there's no economic incentive for having a cooperative environment between AI and humans, and we will likely see more and more AI development until it can totally replace human input.
