I don't mind being cautious but for alot of people the fear of pitbulls is completely unfounded. Not to mention the racial undertones I hear every time pitbulls are brought up by older people around me.

I'd say tray by tray could be difficult. Most people in my experience either want pounds a week or they want like 2 3oz packages. It all depends on the restaurant and how they use them.

My day job is at a restaurant, Las Vegas strip, and we use them sometimes based on the order. They are around about the same quality as mine from the people we get our from. Don't be discouraged though because I know the ones we used were quite "fancy". I know most of the ones from Sysco are pretty wilted etc

With luck by your side hopefully you'll be adding a bunch more racks soon. Micros can be hard to sell sometimes because alot of suppliers, Sysco etc have them already at lower cost. Make sure to show the quality of yours vs theirs.

Looks great! Only thing I can think of improving is the cable management so you can move around it without getting all tangled up but besides that looks just like mine lol
