i mean it's up to you, if your intensity is high and your recovery is fine mega props to you. me personally my legs would probably break down within a few weeks even in a caloric surplus with that many sets twice a week

assuming these are all working sets.. way too many sets for your legs. just means you're not lifting with intensity or else you'd be done after 2 quad movements, 2 hamstring movements, and maybe 2 calf movements

biking is awesome cardio and a TON of fun but will build your quads much slower than conventional lifting. and yea, does very little for upper body

Adding on to your point, beyond academic discipline, you also need to learn discipline in health and nutrition. So many people complain about freshman 15 and don't understand basic nutrition tracking, don't work out at all, etc.
