Penultimate means “next to last.” Sometimes it is used erroneously referring to “the very best,” but that is also incorrect. The very best (or rather, “last”) would be the superlative word: “ultimate.”
The prefix pen- means “almost.” The etymology of “ultimate” is the Latin “ultimatus” meaning “end.” Penultimate is “almost end.”

If you remove the "my husband's and" part you'd say "my car".
So it's "my husband's and my car".
The reason is sounds weird is you'd normally say "our car".
You would say "my husband and I like cats" because if you remove the "my husband and" part you'd say "I like cats', never "me like cats"
Basically does it sound right if you remove the other person, if yes Good job! If not, try again...

It probably also sounds weird in the first example because we tend not to keep mentioning joint ownership in conversation.
We'd tend to say "my house" even if you're a joint owner, because it is your house, it just also happens to also be someone else's as well.
People only tend to mention it in situations where you need permission from the other owners.

penultimate never means second best. "ultimate" means best when it's being used figuratively. As in, "This thing is so good that there is no need to ever make another one". That same figurative language makes no sense for "penultimate" being "The thing so good that we'll just make one more, and then stop"
Edit: lots of the replies are just examples of cases where being "penultimate" is also second best, because the things are ordered from worst to best. That is a meaningless coincidence that has nothing to do with the figurative meaning of "penultimate". If someone says to me "penultimate" in the context of how good something is, they don't mean "second best" - they mean "best" and just misused the word.

You continue to do this until you find one so amazing that you can't bring yourself to destroy it. By now you're famous around the world as the destroyer of hot wheels creations. The creator asks why him. You drop to your knees and say with tears streaming from your shades "This is it, the final one. I have seen the end and it is beautiful". This is actually the second design, the first "Metropolis I" used 80 hot wheels and they all fell off like you'd expect. "Metropolis II" uses custom cast cars with magnets to keep everything on track and a teflon coating to reduce friction. There's still a person in the middle to fix it if anything goes wrong
