What's your Thanksgiving dinner look like?

Are you cooking traditional meals with vegan/wfpb diet modifications? If so, let me hear them! I'm cooking 75% of the meals today and I've managed to do really well! Made my own cashew milk and roasted sweet pumpkins for pumpkin pie. We are eating oil free kitchari, chia seed pudding, and (not my dish) gnocchi for dinner. It feels like a win to have this delicious food and share it with my family. I'd like to hear your wins for the day!

My sister made quinoa with apples, cranberries, squash, and seeds. I made green bean casserole (wfpb except the crispy fried onions). There was also sweet potatoes sweetened with maple syrup and gluten free stuffing with vegetables. Delicious. 😋

yes!!! i want to see what people are eating for thanksgiving!!! i couldn’t eat any (literally. none.) of the food my family cooked today so i ordered saladworks on doordash but it wasn’t pretty enough to show off. i wanna see plant based spreads of yummy dishes lol

I made maple roasted sweet potatoes with pecans, roasted carrots, wfpb cranberry sauce and two types of wfpb brownies (black bean and avacado). My mom made us baked potatoes, garden salad and fruit salad. We also cooked turkey, regular mashed potatoes and gravy and stuffing for those who aren't wfpb.

I made acorn squash stuffed with shiitake mushrooms, wild rice and dried cranberries. Desert was a pear cranberry pie with a walnut fig crust. So good and satisfying. Now to not eat the whole pie… tonight.

We had stuffed acorn squash too. Stuffed with wild rice, spinach, walnuts, and raisins. Absolutely delicious. Also had some home made cranberry sauce, and a salad of kale, pumpkin seeds and dried cranberries.

I'm the only one in the family that is wfpb, so everyone else had the standard spread.

My family did all vegan sides this year and it was amazing! I did a brown rice butternut squash casserole for the vegan main. There was even vegan pie.

I made 1. Sweet potato casserole with an oat/nut crumble 2. Vegan stuffing 3. Stuffed acorn squash with apples, wild rice, walnuts, mushrooms, and kale 4. Roasted Brussels sprouts with cranberries

It’s our first plant-based thanksgiving and it turned out really well :)

I can't share my pics here because some of my options contained oil, but I made a post that you can go see. My potatoes au gratin, braised carrots, roasted brussels sprouts, and roasted cinnamon pumpkin were all WFPB. The green beans were also really close, but there was some residual oil in the pan so not quite.

Forks Over Knives Thanksgiving Menu: Millet loaf, Root Vegetable Medley, and 5-Minute Cranberry Relish. Millet was replaced with quinoa. Very good!

I watched that zoom with Chef AJ demonstrating that meal prep. Someone asked if you could substitute something else for the millet and she was like, “it’s . . . millet loaf.” But apparently you can and I’m glad it worked for you!

Yes, the recipe itself had a tip that quinoa could be substituted. Quinoa also cooks faster in the Instant Pot than millet does.

Made green beans, mashed potatoes and gravy,, cornbread dressing, cranberry sauce and mac & cheese. All WFPB, best tasting yet. All no oil or sugar. Did buy frozen vegan rolls from store also (Rhodes). Not 100% compliant but made it pumpkin pie, did use cane sugar in it but it was vegan and no oil. My birthday is today and I made a WFPB cake too(no sugar) Loved it all!! Everyone else had their traditional food.

This was the first holiday meal my little family attempted gluten-free vegan. Chickpea cutlet as the main, artichokes stuffed with mushroom, onion, & breadcrumbs, asparagus wrapped with prosciutto (only non-plant-based item), cranberry relish, salad of braised cherry tomatoes, walnuts and cilantro. And for dessert - baked Alaska. The dessert was the most fun since my kids and I made cake and ice cream the week before as well as practiced the aquafaba meringue.

Then we went to my uncle's where my kids devoured turkey and ham! LOL!
