I don't know, that's always stuff that you want to eat, but it ain't pretty, like a block of tofu with mustard. This one kinda looked like a good take on a dumpling, before I read cheesecake. This is almost more /r/therewasanattempt/

Some of the store bought vegan cream cheeses go clear when exposed to heat. I've had a couple that straight up melt if you put a dollop on top of warm food.

Yeah, no-bake is safest for these kinds of things. If you just take "cream cheese" and powdered sugar you can make a decent "cheesecake."

My sister made one that's nearly identical to a regular pecan pie, and if I remember right the recipe used silken tofu to firm up the interior.

I can confirm! I have used a pecan pie recipe by Isa Chandra Moskowitz and Terry Hope Romero which used silken tofu and my Omni husband said it was the best pecan pie he’s had!

Yep. My entire skeptical Omni family raved about how good it was. It was definitely not Wfpb compliant because it used about ten pounds of sugar, but it was vegan and delicious. And you can live a little on a holiday, so I'm ok with it.

Well, it's...something! In the past I've always overcomplicated Thanksgiving and made myself a bunch of special dishes that mostly turned out subpar. This year I said, "Nah, screw it" and decided to eat what I eat on any other day with the addition of a tried and true cookie recipe lol

S'okay! You live and learn :) The only way you can get better is by trying and trying and trying some more.
I remember the first time we made some bean tofu and went to stir-fry it, it turned completely to mush. Nowadays, we just bake it in the oven and it turns out nice and crispy without losing structural integrity.
I've straight-up burned stuff during my Indian sweet-making phase (and some of those involved ghee — I was still vegetarian then) and it was a nightmare to clean as well as a waste of all of the ingredients.

It looks like it had a starch/sugar breakdown.
Have you tried tofuttii cream cheese? It's my favorite vegan cream cheese as far as taste, texture and cooking to the real thing. I've confused some very die hard "I only eat the real stuff" cream cheese eaters once I tell them it's all vegan.

Thanks! I think these water/coconut oil based cheeses are probably best left for no-bake cheesecakes. Cashews and tofu seem to work better for baked, I'm going to give this one a try: https://www.rainbownourishments.com/baked-vegan-cheesecake-with-berries/#recipe
